榨菜,被子植物门,双子叶植物纲的一科。多为草本植物。榨菜是芥菜中的一类,一般都是指叶用芥菜一类,如九头芥、雪里蕻、猪血芥、豆腐皮芥等。榨菜是一种半干态非发酵性咸菜,以茎用芥菜为原料腌制而成,是中国名特产品之一与法国酸黄瓜、德国甜酸甘蓝并称世界三大名腌菜。在1898年始见于中国四川涪陵(今重庆市涪陵区),时称“涪陵榨菜”。因加工时需用压榨法榨出菜中水分,故称“榨菜”。现已发展到四川省内30多个市县,浙江、福建、江苏、上海、湖南、广西、台湾等省(直辖市、自治区)也有生产。
