无色或淡黄色液体,具有类似风信子的香气,稀释后具行水果的甜香气。难溶于水。溶于大多数有机溶剂。以1:2溶于80%乙醇。性质不稳定,放置能聚合变稠,能被氧化成苯乙酸,也能被还原成苯乙醇。能与醇(如甲醇、乙醇)缩合成缩醛。存在于烤烟烟叶、白肋烟烟叶、香料烟烟叶中。天然存在于鸡肉、西红柿、面包、玫瑰油、柑橘油里。
