蛋白酶是水解蛋白质肽链的一类酶的总称。按其降解多肽的方式分成内肽酶和端肽酶两类。前者可把大分子量的多肽链从中间切断，形成分子量较小的朊和胨；后者又可分为羧肽酶和氨肽酶，它们分别从多肽的游离羧基末端或游离氨基末端逐一将肽链水解生成氨基酸。
