五香蚕豆是上海市知名的小吃。采用传统的五香制法。去除杂质,拣去黄板、小粒和蛀粒。除去泥灰和淘去瘪粒。放入锅内,加水至高出豆面3~4厘米,加盖以旺火烧煮,去其涩味。将煮约0.5小时后把豆捞出沥去水,再放入锅内,加老卤、盐和糖精(如没有老卤,盐和糖精的用量需加倍)等辅料,再以缓火煮约0.5小时,烧煮时间不要过头。熟后喷香精搅拌,捞出翻拌,冷却后即成。
