干酪乳杆菌(L．casei)为短杆状或长杆状的多形性杆菌，长短不一，一般宽度均小于1．5μm。菌两端平齐呈方形，排列方式多为短链或呈长链。有时亦可见到球形茵。革兰氏染色阳性，无运动性，不产生芽胞。
干酪乳杆菌(Lactobacillus casei)是只产生L-乳酸的同型乳酸发酵菌种,也是L-乳酸发酵生产最常用菌种,但到目前为止,还未见能够利用工业原料蔗糖进行发酵的报道。
