This study applied HACCP (Hazard Analysis and Critical Control Point) principles to analyse the hazard in the process of shredded pork with pickled mustare tuber, and putted forward the preventive measures to its hazard.
本研究应用HACCP(危害分析和关键控制点)的基本原理对榨菜肉丝的生产过程进行危害分析并提出危害的预防措施,通过CCP判决树确定了关键控制点,即榨菜丝保脆后的表面杀菌、肉丝的油制、辅料的油制和包装后的杀菌。
