糖化酶又称葡萄糖淀粉酶,糖化酶是一种习惯上的名称,学名为α-1,4-葡萄糖水解酶(α-1,4-Glucan glucohydrolace)。多应用于酒精、淀粉糖、味精、抗菌素、柠檬酸、啤酒等工业以及白酒、黄酒。糖化酶是由曲霉优良菌种(Aspergilusniger)经深层发酵提炼而成。
