系统性淀粉样变性（systematic amyloidosis）是由于淀粉样蛋白（amyloid）在全身细胞外组织间隙中沉积，从而破坏细胞和器官功能的疾病。Picken等提出的该病最新定义是淀粉样变性是一组由遗传、变性和感染等不同因素引起的，因蛋白质分子折叠异常所致的淀粉样物质的沉积综合征。
