菠萝冻是一道美味可口的汉族名点，属于粤菜系。把将菠萝榨汁备用；琼脂用温水浸泡2小时，入锅，加水用小火煮溶，再加入菠萝汁，白糖搅匀；将菠萝切成小块，与尚未凝结的琼脂混合液一并装入数小碗内，放进冰箱冷藏室内凝结成冻；食用时，取出菠萝冻扣入碟中即成。 菠萝内含维生素A、B、C，钙、磷、钾等矿物质，脂肪，蛋白质等。其中一种叫“菠萝脘酶”的物质能分解蛋白质，溶解阻塞于组织中的纤维蛋白和血凝块。
