食用油脂,也称作液体植脂末、液体奶精等;食用油脂有动物脂肪和植物油两大类,由于它们的来源、性状和稳定性等方面有所不同,因此,其营养价值也不同。动物脂防包括猪脂,牛、羊脂等动物体脂、乳脂,以及海洋鱼类的脂肪;植物油有豆油、菜籽油、花生油、棉籽油、芝麻油、葵花子油、亚麻油、核桃油、玉米油、米糠油等。近年来,我国还引种和发展含油量非常丰富的木本植物如油棕、油橄榄、油茶和油瓜等,含油率均达40% ~81.9%,是扩大油源的新途径之一。
