五香蚕豆
五香蚕豆是上海市知名的小吃。采用传统的五香制法。去除杂质，拣去黄板、小粒和蛀粒。除去泥灰和淘去瘪粒。放入锅内，加水至高出豆面3～4厘米，加盖以旺火烧煮，去其涩味。将煮约0.5小时后把豆捞出沥去水，再放入锅内，加老卤、盐和糖精(如没有老卤，盐和糖精的用量需加倍)等辅料，再以缓火煮约0.5小时，烧煮时间不要过头。熟后喷香精搅拌，捞出翻拌，冷却后即成。
