干菜大多由新鲜蔬菜经日光晒后而成，如干豆腐片、长治萝卜黄菜、茄子干、南瓜干、干豆角、雪里蕻。干菜最有名的是五台山的台蘑、中条山的猴头、大同的黄花菜和管涔山的银盘蘑。山西的腌菜干菜风味独特，花样繁多。腌菜和干菜是过去春天冬天的农家常用菜。
