特色传统名菜,属川菜系。主料瘦黄牛肉。辅料豆芽、鸭血、肉汤、莴笋或者其他蔬菜、粉丝。调料葱、精盐、酱油、花椒、味精、熟菜油、干辣椒、辣椒油、胡椒粉、醪糟汁、湿淀粉、郫县豆瓣酱。因菜中牛肉片是在辣味汤中烫熟,故名水煮牛肉。 将牛肉切成一寸五分长、八分宽、一分厚的薄片,盛在碗里,加精盐、酱油、醪糟汁、湿淀粉拌匀。油锅中放郫县豆瓣、干辣椒炒成棕黄色,再下花椒、葱段、莴笋片炒香,加肉汤烧开,将牛肉片下锅,煮至肉片伸展,外表发亮,盛入碗中,淋上辣椒油,即可食用。此菜麻辣味厚,滑嫩适口,香味浓烈,具有川味火锅麻、辣、烫的风味。水煮牛肉于1981年被选入《中国菜谱》。
