百科

游离水
亦称自由水。以毛细作用的形式存在于粮粒内部间隙中的水。具有普通水的性质，比较活泼，易于蒸发，能作为溶剂，在0℃易结冰，是粮食进行一切生化反应的介质。一般谷类水分达到14%～15%以后，开始出现游离水。粮食水分的增减主要是游离水的变化。
