真菌毒素
真菌毒素是真菌在食品或饲料里生长所产生的代谢产物，对人类和动物都有害。真菌毒素造成中毒的最早记载是11世纪欧洲的麦角中毒，这种中毒的临床症状曾在中世纪的圣像画中描述过。由于麦角菌的菌核中会形成有毒的生物碱，所以这种疾病至今仍称为麦角中毒。急性麦角中毒的症状是产生幻觉和肌肉痉挛，进而发展为四肢动脉的持续性变窄而发生坏死。
