糟青鱼

糟青鱼是一道四川省的汉族传统名菜,属于川菜系。糟香扑鼻,汤清味鲜,鱼肉细嫩,汤菜兼优。将鱼段皮朝下,在脊骨上横切三刀(骨断肉连),用精盐擦抹鱼段,腌6小时。香糟用绍酒调匀,涂抹在鱼肉上,然后放在钵中,上放重物压紧鱼段,腌12小时后,取出洗净;锅置火上放清水。放入“糟鱼”,加葱姜烧沸,撇去浮沫,加绍酒、精盐,加盖移微火焐10至15分钟,将鱼捞出,皮朝上装入汤锅中,原汤拣去葱姜,加入火腿片、冬菇片、笋片、菠菜,烧沸后加味精倒入鱼碗中,将配料排放在鱼段上,淋入熟猪油即成。
