脆薯凤尾虾是广东省传统的汉族名菜,属于粤菜系。薯仔原只连皮煲熟,去皮压成薯茸,加入调味料搅匀备用。剥去虾的头、壳、保留尾部的壳不除,挑去虾背的肠,在虾腹处轻手划一浅刀(可使虾熟后不会弯曲),将虾肉放在冰水浸半小时,或放在冰箱冷藏1小时。虾肉先吸干水分,用薯茸包裹留尾壳,上蛋汁,扑生粉。净镬烧滚三杯油,放下薯茸虾炸至金黄色,取出沥干油分上碟,可跟千岛汁蘸食。
