荷叶粉蒸肉是一款享有较高声誉的名菜。在清末,相传其名与“西湖十景”的“曲院风荷”有关。它是用当时杭州的鲜荷叶,将炒熟的米粉和经调味的猪肉裹包起来蒸制而成,其味清香,鲜肥软糯而不腻,夏天食用很适合胃口。荷叶粉蒸肉特点;易码盘整齐美观、荷叶可凉血解毒、肉酥烂米粉软糯、味清香肥而不腻。用大碗或盆一只,底上放鲜荷叶一张,将拌好粉的肉排放在上面,复盖一张荷叶,上笼用旺火蒸2小时至酥熟,再用小张鲜荷叶将块肉分别包好,吃前再上笼用文火焖蒸30分钟即成。
