蟹粉狮子头是江苏扬州地区特色传统名菜,属于淮扬菜系。口感松软,肥而不腻,营养丰富。红烧,清蒸,脍炙人口。主要原料是蟹肉和用猪肉斩成细末做成的肉丸,(扬州人俗称“斩肉”)。斩肉的做法很多,有清炖,有水氽的,有先油煎后红烧的,有先油炸后与其他食物烩制的,有用糯米滚蒸的。所谓狮子头则是菜肴造型——大而圆,夸张比方为狮子头。
