话梅
话梅是芒种后采摘的黄熟梅子（俗称黄梅）经过加工腌制而成。黄梅从树上采下洗净，放大缸里用盐水泡浸月余，取出晒干；晒干后用清水漂洗，再晒干；然后用糖料泡腌，再晒干，如此多次反复，最后成为肉厚干脆、甜酸适度的话梅。最初，话梅是说书先生用来润口的，因说的时间长了，口干舌燥，便含一颗盐渍梅子在口中（那时候又不如这般便利，饮用水说来便来），酸咸的味道刺激味蕾，使唾液分泌津液满口，便可继续说下去。（说书先生的“书”称“话本”，其梅亦称“话梅”）
