The application of modern instrumental analysis technology in food Geographical Origins determination were summarized in this paper. The basic principle of Infrared Spectrum (IR) , Nuclear Magnetic Resonance(NMR), Inductively Coupled Plasma Mass Spectrometry(ICP - MS)and Isotope technique were also introduced.
